Moist burritos

Sure, here’s a simple recipe for moist burritos:

Ingredients:

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • Optional toppings: diced tomatoes, shredded lettuce, sour cream, guacamole, cilantro

Instructions:

  1. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  2. Add the chopped onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the black beans, cooked rice, salsa, chili powder, cumin, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld together.
  4. Preheat your oven to 350°F (175°C).
  5. Spoon the filling mixture onto each flour tortilla, dividing it evenly among them. Sprinkle shredded cheese on top of the filling.
  6. Roll up each tortilla, folding in the sides as you go, to form burritos.
  7. Place the burritos seam-side down in a baking dish sprayed with non-stick cooking spray.
  8. Bake in the preheated oven for 15-20 minutes, or until the burritos are heated through and the cheese is melted and bubbly.
  9. Serve the moist burritos hot with your favorite toppings such as diced tomatoes, shredded lettuce, sour cream, guacamole, and cilantro.
