Mini Meatloaf Muffins

Mini meatloaf muffins are a delicious and convenient twist on traditional meatloaf. Here’s a simple recipe to make them:

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, chopped bell pepper, Parmesan cheese, egg, ketchup, Worcestershire sauce, garlic powder, salt, and black pepper. Mix everything together until well combined.
  3. Divide the meat mixture evenly into the muffin cups, pressing it down slightly to fill each cup.
  4. Bake in the preheated oven for about 20-25 minutes, or until the mini meatloaves are cooked through and browned on top.
  5. Once cooked, remove the mini meatloaves from the oven and let them cool for a few minutes before serving.

These mini meatloaf muffins are perfect for serving as a fun appetizer, snack, or even as part of a meal alongside mashed potatoes and vegetables. Enjoy!
