Mini chicken pot pies

Mini chicken pot pies are a delightful and convenient way to enjoy the classic flavors of a traditional chicken pot pie in individual servings. Here’s a simple recipe for mini chicken pot pies:

Ingredients:

For the Filling:

  • 1 cup cooked chicken, diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 3/4 cups chicken broth
  • 2/3 cup milk

For the Crust:

  • 2 pre-made pie crusts or puff pastry sheets

Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).
  2. Prepare the Filling:
    • In a saucepan, melt the butter over medium heat.
    • Stir in the flour, salt, pepper, celery seed, onion powder, and garlic powder until well combined.
    • Gradually whisk in the chicken broth and milk, cooking and stirring until the mixture thickens and becomes smooth.
    • Add the cooked chicken and mixed vegetables to the saucepan. Stir until everything is evenly coated with the sauce. Remove from heat.
  3. Assemble the Mini Pies:
    • Roll out the pie crusts or puff pastry sheets on a lightly floured surface.
    • Using a round cutter or a glass, cut circles from the dough that will fit into your mini pie tins or muffin cups.
  4. Fill the Pies:
    • Place the circles of dough into the mini pie tins or muffin cups, pressing them gently to form the crust.
    • Spoon the chicken and vegetable filling into each crust.
  5. Top with Crust:
    • If using pie crust, cut additional circles for the pie tops and place them over the filling. If using puff pastry, cut squares or circles to cover the filling.
    • Press the edges of the top and bottom crusts together to seal the mini pies.
  6. Bake:
    • Place the mini pies on a baking sheet to catch any spills.
    • Bake in the preheated oven for 20-25 minutes or until the crust is golden brown.
  7. Serve:
    • Allow the mini chicken pot pies to cool for a few minutes before serving.
