Mexican Style Chili Beans

Here’s a Mexican Style Chili Beans recipe that’s flavorful, hearty, and perfect as a main dish, side, or taco filling. You can make it vegetarian or add meat, depending on your preference.


🌶️ Mexican Style Chili Beans Recipe

📝 Ingredients:

Base:

  • 2 tbsp olive oil

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1–2 jalapeños or serrano chiles, minced (optional for heat)

  • 1 bell pepper, chopped (any color)

  • 1–2 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp chili powder

  • ½ tsp oregano

  • ½ tsp ground coriander (optional)

  • Salt & black pepper to taste

Beans & Sauce:

  • 2 cans (15 oz) pinto beans or black beans, drained and rinsed

  • 1 can (14.5 oz) diced tomatoes (or fresh equivalent)

  • 1 tbsp tomato paste

  • 1 cup vegetable broth or water

  • 1 tsp apple cider vinegar or lime juice (for brightness)

Optional Add-Ins:

  • ½ lb ground beef, turkey, or chorizo (brown first before onions)

  • 1 cup corn (fresh or frozen)

  • ½ tsp chipotle in adobo sauce (for smoky heat)

  • Fresh chopped cilantro for garnish


🍳 Instructions:

  1. Sauté Aromatics:
    Heat olive oil in a skillet or pot over medium heat. Add onion and cook until softened (about 5 minutes). Add garlic, jalapeño, and bell pepper. Cook another 3 minutes.

  2. Spice It Up:
    Stir in cumin, paprika, chili powder, oregano, and coriander. Let spices bloom for 30 seconds.

  3. Simmer:
    Add beans, diced tomatoes, tomato paste, and broth. Stir well. Bring to a low boil, then reduce to a simmer. Cook uncovered for 15–20 minutes, stirring occasionally.

  4. Finish:
    Add vinegar or lime juice. Taste and adjust seasoning. Let simmer another 5 minutes if needed.

  5. Serve:
    Top with chopped cilantro, avocado, or a squeeze of lime. Serve with rice, tortillas, or as a filling for tacos/burritos.
