Mexican Rotisserie Chicken Tostadas

Here’s a delicious and easy Mexican Rotisserie Chicken Tostadas recipe, perfect for a quick weeknight meal:


🌮 Mexican Rotisserie Chicken Tostadas

📝 Ingredients:

  • 2 cups rotisserie chicken, shredded

  • 1 tablespoon olive oil

  • 1/2 cup onion, finely chopped

  • 1 clove garlic, minced

  • 1 teaspoon chili powder

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • Salt & pepper to taste

  • 1/4 cup salsa (your favorite)

  • 6 tostada shells (store-bought or homemade)

🧀 Toppings (customize as you like):

  • Refried beans (warmed)

  • Shredded lettuce

  • Diced tomatoes

  • Sliced avocado or guacamole

  • Shredded cheddar or Mexican blend cheese

  • Sour cream or Mexican crema

  • Pickled jalapeños

  • Fresh cilantro

  • Lime wedges


🔪 Instructions:

  1. Sauté the aromatics
    Heat olive oil in a skillet over medium heat. Add onion and cook for 2–3 minutes until soft. Stir in garlic and cook 30 seconds more.

  2. Warm the chicken
    Add shredded rotisserie chicken, chili powder, cumin, paprika, salt, pepper, and salsa. Stir and heat for 3–4 minutes until warm and coated in spices.

  3. Prep tostadas
    If using store-bought tostadas, warm them in the oven at 350°F (175°C) for 5 minutes. If making your own, lightly fry corn tortillas in oil until crisp.

  4. Assemble
    Spread a layer of refried beans on each tostada shell. Top with warm chicken mixture, then add your choice of toppings.

  5. Serve
    Garnish with fresh cilantro and a squeeze of lime juice. Serve immediately.
