Mexican Beef Enchiladas

Here’s a delicious Mexican Beef Enchiladas recipe with rich flavor and comforting textures:


🌮 Mexican Beef Enchiladas

Servings: 6 | Prep Time: 20 mins | Cook Time: 25 mins

📝 Ingredients:

For the beef filling:

  • 1 lb (450g) ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • ½ tsp smoked paprika

  • Salt & pepper to taste

  • ½ cup tomato sauce

  • ½ cup canned black beans (optional)

  • ½ cup corn kernels (optional)

For the enchiladas:

  • 8 small flour or corn tortillas

  • 2 cups shredded cheddar or Mexican cheese blend

  • 2 cups enchilada sauce (store-bought or homemade, see below)

Optional toppings:

  • Sour cream

  • Chopped cilantro

  • Sliced green onions

  • Diced avocado or guacamole


🔥 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.

  2. Cook the beef filling:

    • In a skillet over medium heat, sauté the onion until soft (about 3–4 minutes).

    • Add garlic and cook 30 seconds.

    • Stir in ground beef and cook until browned. Drain any excess fat.

    • Add chili powder, cumin, paprika, salt, pepper, and tomato sauce. Simmer for 5 minutes.

    • Mix in black beans and corn if using. Remove from heat.

  3. Assemble enchiladas:

    • Spread ¼ cup enchilada sauce on the bottom of the baking dish.

    • Fill each tortilla with about ¼ cup beef mixture and a sprinkle of cheese.

    • Roll up and place seam-side down in the dish.

    • Pour remaining enchilada sauce over top and sprinkle with remaining cheese.

  4. Bake:

    • Cover with foil and bake for 15 minutes.

    • Uncover and bake another 10 minutes until cheese is bubbly and golden.

  5. Serve:

    • Let cool slightly before serving.

    • Garnish with sour cream, cilantro, avocado, or anything you like!


❤️ Homemade Enchilada Sauce (Optional)

If you want to make it from scratch:

Quick Sauce:

  • 2 tbsp oil

  • 2 tbsp flour

  • 2 tbsp chili powder

  • 1 tsp cumin

  • ½ tsp garlic powder

  • 1½ cups chicken broth

  • Salt to taste

  • 1 tbsp tomato paste (optional)

Whisk oil and flour in a saucepan for 1–2 minutes. Stir in spices, broth, and tomato paste. Simmer 5–7 minutes until thickened.
