Here’s a delicious Mediterranean Salmon Patties recipe—packed with bright herbs, tangy feta, and fresh flavor:


Mediterranean Salmon Patties

Ingredients:

  • 2 cans (6–7 oz each) salmon, drained and flaked (or 1½ cups cooked fresh salmon)

  • 1/3 cup breadcrumbs (panko or regular)

  • 1/4 cup red onion, finely chopped

  • 1/4 cup crumbled feta cheese

  • 1/4 cup fresh parsley or dill, chopped

  • 1/4 cup sun-dried tomatoes, finely chopped (optional)

  • 1 egg, lightly beaten

  • 1 garlic clove, minced

  • 1 tsp lemon zest

  • 1 tbsp fresh lemon juice

  • 1 tsp dried oregano

  • Salt and black pepper to taste

  • Olive oil for pan-frying


Optional Tzatziki Sauce (for serving):

  • 1/2 cup Greek yogurt

  • 1/4 cucumber, finely grated and squeezed dry

  • 1 garlic clove, minced

  • 1 tsp lemon juice

  • 1 tbsp fresh dill or mint, chopped

  • Salt and pepper to taste

Mix all and chill until ready to serve.


Instructions:

  1. Mix the Patties:
    In a large bowl, combine the salmon, breadcrumbs, onion, feta, herbs, sun-dried tomatoes (if using), egg, garlic, lemon zest, lemon juice, oregano, salt, and pepper. Mix gently until well combined.

  2. Shape:
    Form into 6–8 patties. Chill for 10–15 minutes if time allows (helps them hold together).

  3. Cook:
    Heat 2–3 tablespoons of olive oil in a skillet over medium heat. Cook patties 3–4 minutes per side or until golden and cooked through.

  4. Serve:
    Serve warm with tzatziki sauce, a fresh salad, or in pita bread with lettuce, tomato, and cucumber.
