Certainly! Mediterranean Quinoa Salad is a delicious and nutritious dish that incorporates the flavors and ingredients commonly found in Mediterranean cuisine. Here’s a simple recipe for you:

Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped (optional)
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed. Fluff with a fork and let it cool.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and mint.
  3. In a small bowl, whisk together the lemon juice, extra virgin olive oil, dried oregano, salt, and pepper.
  4. Pour the dressing over the quinoa mixture and toss everything together until well combined.
  5. Taste and adjust the seasonings if needed. You can add more lemon juice, olive oil, or salt according to your preference.
  6. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  7. Before serving, give the salad a final toss and garnish with additional fresh herbs or feta cheese if desired.
