Certainly! Meatloaf muffins are a fun and convenient way to enjoy this classic dish. Here’s a simple recipe for meatloaf muffins:

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1/3 cup ketchup
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1 egg, beaten
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

For the Glaze:

  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp Dijon mustard

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, ketchup, chopped onion, chopped bell pepper, beaten egg, Worcestershire sauce, garlic powder, dried thyme, dried oregano, salt, and pepper. Mix until well combined.
  3. Divide the meat mixture into the muffin cups, pressing it down to form even-sized meatloaf muffins.
  4. In a small bowl, whisk together the ingredients for the glaze: ketchup, brown sugar, and Dijon mustard.
  5. Spoon the glaze over the top of each meatloaf muffin, spreading it to cover the surface.
  6. Bake in the preheated oven for about 25-30 minutes or until the internal temperature reaches 160°F (71°C).
  7. Once cooked, let the meatloaf muffins rest for a few minutes before serving.
