Ingredients:

For the Matzo Balls:

  • 4 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup seltzer water or chicken broth
  • 1 cup matzo meal

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)

For the Soup:

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 8 cups chicken broth
  • Salt and pepper to taste
  • Fresh dill or parsley, chopped (for garnish)

Instructions:

  1. Prepare the Matzo Balls:
    • In a large mixing bowl, beat the eggs.
    • Add the vegetable oil and seltzer water or chicken broth to the beaten eggs and mix well.
    • In a separate bowl, combine the matzo meal, salt, pepper, garlic powder, and onion powder (if using).
    • Gradually add the dry ingredients to the wet ingredients, stirring until well combined. Cover the bowl and refrigerate the mixture for at least 30 minutes (or up to a few hours) to allow it to firm up.
  2. Form the Matzo Balls:
    • After chilling, wet your hands with water to prevent sticking, then roll the matzo mixture into balls, about 1 inch in diameter. Place them on a plate or tray.
  3. Cook the Matzo Balls:
    • In a large pot, bring salted water to a boil.
    • Carefully drop the matzo balls into the boiling water.
    • Reduce the heat to a simmer and cover the pot. Cook the matzo balls for about 30-40 minutes, or until they are cooked through and tender. They will float to the surface when done.
    • Once cooked, remove the matzo balls from the water using a slotted spoon and set aside.
  4. Prepare the Soup:
    • In another large pot, heat the vegetable oil over medium heat.
    • Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
    • Pour in the chicken broth and bring the soup to a simmer. Let it cook for another 10-15 minutes to allow the flavors to meld together.
    • Season the soup with salt and pepper to taste.
  5. Serve:
    • Ladle the hot soup into bowls and add a few matzo balls to each bowl.
    • Garnish with chopped fresh dill or parsley, if desired.
    • Serve hot and enjoy!
