Marry Me Chicken & Ravioli

Ingredients:

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • Salt and pepper, to taste
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 4 cloves garlic, minced
    • 1 teaspoon dried thyme (or Italian seasoning)
    • 1/2 cup sun-dried tomatoes (chopped)
    • 1/2 cup heavy cream
    • 1/2 cup chicken broth
    • 1/2 cup grated Parmesan cheese
    • Fresh basil or parsley (for garnish)
  • For the Ravioli:
    • 1 package of cheese ravioli (or any ravioli of your choice)

Instructions:

  1. Cook the Ravioli:
    • Boil water in a large pot and cook the ravioli according to package instructions. Drain and set aside, keeping some of the pasta water in case you need it later.
  2. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, and thyme (or Italian seasoning).
    • Heat olive oil and butter over medium-high heat in a large skillet.
    • Add the chicken breasts and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the pan and set it aside.
  3. Make the Creamy Sauce:
    • In the same skillet, add the garlic and cook for 1-2 minutes until fragrant.
    • Add the sun-dried tomatoes and cook for another 2 minutes, allowing the flavors to meld together.
    • Pour in the chicken broth and heavy cream, stirring well to combine.
    • Bring the mixture to a simmer and cook for about 3-5 minutes, allowing it to thicken slightly.
    • Stir in the Parmesan cheese, continuing to stir until the sauce is creamy and smooth. Taste and adjust seasoning if necessary.
  4. Combine:
    • Return the chicken breasts to the skillet and spoon some of the creamy sauce over the chicken. Let it simmer for another 3-4 minutes to ensure the chicken is fully coated and the flavors meld together.
    • Add the cooked ravioli to the skillet, gently tossing to combine with the sauce. If the sauce needs thinning, add a little reserved pasta water.
  5. Serve:
    • Plate the ravioli and top with the creamy chicken and sauce.
    • Garnish with fresh basil or parsley.
    • Serve hot and enjoy!
