Mango Swirl Cheesecake is a delicious dessert that combines the rich and creamy texture of cheesecake with the sweet and tangy flavor of mango. The result is a tropical twist on a classic treat. Here’s a recipe to make Mango Swirl Cheesecake:

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs (about 10-12 graham crackers)
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

For the cheesecake filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1/4 cup heavy cream

For the mango swirl:

  • 1 cup fresh mango puree (from about 2 ripe mangoes)
  • 2 tbsp sugar (optional, depending on the sweetness of the mango)
  • 1 tbsp lemon or lime juice

Instructions:

1. Prepare the crust:

  • Preheat the oven to 325°F (165°C).
  • In a medium bowl, mix the graham cracker crumbs and sugar.
  • Add the melted butter and mix until the crumbs are evenly coated.
  • Press the mixture into the bottom of a 9-inch springform pan to form a compact crust.
  • Bake for 8-10 minutes, then remove from the oven and let cool.

2. Prepare the mango swirl:

  • In a blender or food processor, puree the mango flesh until smooth.
  • If the mango is not sweet enough, add sugar to taste.
  • Add the lemon or lime juice to balance the flavor.
  • Set the mango puree aside.

3. Prepare the cheesecake filling:

  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  • Add eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract, sour cream, and heavy cream, mixing until smooth.
  • Pour the cheesecake batter into the prepared crust.

4. Create the mango swirl:

  • Drop spoonfuls of the mango puree over the top of the cheesecake batter.
  • Use a knife or a skewer to gently swirl the mango into the cheesecake batter, creating a marble effect.

5. Bake the cheesecake:

  • Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set, but the center still slightly jiggles when the pan is gently shaken.
  • Turn off the oven and leave the cheesecake in the oven for 1 hour with the door slightly ajar to cool gradually.

6. Chill and serve:

  • After the cheesecake has cooled, cover it and refrigerate for at least 4 hours, or preferably overnight.
  • Before serving, you can garnish with additional fresh mango slices or a drizzle of mango puree for extra flair.
