Macaroni with cashew pesto is a delightful twist on the classic pasta dish, substituting traditional basil pesto with a creamy and nutty cashew-based pesto sauce. Here’s a simple recipe to make this flavorful dish:

Ingredients:

For the cashew pesto:

  • 1 cup raw cashews, soaked in water for at least 2 hours
  • 2 cups fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup grated Parmesan cheese (optional, omit for vegan version)
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

For the macaroni:

  • 8 ounces macaroni pasta (or any pasta of your choice)
  • Salt for boiling water

Instructions:

  1. Prepare the cashew pesto:
    • Drain the soaked cashews and add them to a food processor along with basil leaves, garlic, and Parmesan cheese (if using).
    • Pulse the ingredients until they are finely chopped.
    • With the food processor running, slowly pour in the olive oil until the mixture becomes smooth and creamy.
    • Season with salt and pepper to taste. Adjust the consistency by adding more olive oil if necessary. Set aside.
  2. Cook the macaroni:
    • Bring a large pot of salted water to a boil.
    • Add the macaroni pasta and cook according to package instructions until al dente.
    • Drain the cooked pasta and return it to the pot.
  3. Combine pasta with cashew pesto:
    • Add the prepared cashew pesto to the cooked macaroni in the pot.
    • Gently toss until the pasta is evenly coated with the pesto sauce.
  4. Serve:
    • Transfer the macaroni with cashew pesto to serving plates or bowls.
    • Garnish with extra basil leaves and a sprinkle of Parmesan cheese, if desired.
    • Serve hot and enjoy!
