Here’s a simple and delicious Macaroni Soup recipe that you can try. This soup is hearty, comforting, and easy to make!

Ingredients:

  • 1 cup elbow macaroni (or any pasta you prefer)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 2 medium potatoes, peeled and diced
  • 1 celery stalk, chopped (optional)
  • 1/2 cup peas (fresh or frozen)
  • 1 can (14 oz) diced tomatoes (or 1-2 fresh tomatoes, chopped)
  • 4 cups vegetable or chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano (optional)
  • 1/2 teaspoon dried thyme (optional)
  • 1/4 cup grated Parmesan cheese (optional, for serving)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Cook the macaroni: In a pot of boiling salted water, cook the macaroni according to the package instructions. Once done, drain and set aside.
  2. Prepare the soup base: In a large soup pot, heat the olive oil over medium heat. Add the chopped onions and garlic. Sauté for about 3-4 minutes until softened and fragrant.
  3. Add the vegetables: Stir in the diced carrots, potatoes, celery (if using), and peas. Cook for another 3-5 minutes, stirring occasionally.
  4. Add the broth and seasonings: Pour in the vegetable or chicken broth and add the diced tomatoes, bay leaf, oregano, thyme, salt, and pepper. Bring the soup to a simmer. Let it cook for about 15-20 minutes or until the vegetables are tender.
  5. Combine the macaroni and soup: Once the vegetables are tender, add the cooked macaroni to the pot. Stir well and let everything heat through for about 5 minutes.
  6. Adjust seasonings: Taste the soup and adjust the seasoning with more salt, pepper, or herbs if needed.
  7. Serve: Ladle the soup into bowls. Garnish with grated Parmesan cheese and fresh parsley if desired. Serve hot!

Tips:

  • For extra flavor, you can add a splash of lemon juice or a few dashes of hot sauce before serving.
  • You can also add cooked chicken or ground meat (beef or pork) for more protein.
  • If you want a creamier version, stir in a little milk or heavy cream before serving.
