Creating low-carb taco shells using spinach is a fantastic idea! Spinach offers a nutrient-packed base for your tacos while keeping the carb count low. Here’s a simple recipe to make spinach taco shells:

Ingredients:

  • 2 cups fresh spinach leaves
  • 2 large eggs
  • 1/4 cup almond flour or coconut flour
  • 1/4 cup grated Parmesan cheese (optional, for added flavor)
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Spinach Mixture: In a food processor or blender, combine the fresh spinach leaves, eggs, almond or coconut flour, grated Parmesan cheese (if using), salt, and pepper. Blend until smooth, scraping down the sides of the bowl as needed.
  3. Forming the Taco Shells: Spoon the spinach mixture onto the prepared baking sheet, spreading it into thin, even circles to form the taco shells. You can use the back of a spoon or an offset spatula to help shape them. Ensure there are no holes in the shells to prevent fillings from leaking out.
  4. Baking: Bake the taco shells in the preheated oven for about 10-12 minutes, or until the edges are crisp and the shells hold their shape. Keep an eye on them to prevent over-browning.
  5. Cooling: Once baked, remove the taco shells from the oven and let them cool for a few minutes on the baking sheet. They will firm up slightly as they cool.
  6. Assembling the Tacos: Once cooled, fill your spinach taco shells with your favorite low-carb taco fillings, such as seasoned ground meat or turkey, shredded chicken, diced vegetables, cheese, salsa, sour cream, avocado, and lettuce.
  7. Enjoy: Serve your low-carb spinach taco shells immediately and enjoy a flavorful, nutritious twist on traditional tacos!
