Low Carb Mousse

Here’s a simple and delicious recipe for Low-Carb Mousse that’s perfect if you’re looking for a rich and creamy treat without the carbs!

Ingredients:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered erythritol (or other low-carb sweeteners, to taste)
  • 2 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder (for chocolate mousse)
  • Pinch of salt

Instructions:

  1. Whip the Cream: In a large mixing bowl, whip the heavy cream with an electric mixer until it forms stiff peaks (about 3-5 minutes).
  2. Mix the Cream Cheese: In a separate bowl, beat the softened cream cheese with the sweetener, vanilla extract, and cocoa powder (for chocolate mousse). Mix until smooth and well-combined.
  3. Fold Together: Carefully fold the whipped cream into the cream cheese mixture, gently mixing until combined. Make sure not to deflate the whipped cream too much.
  4. Chill: Spoon the mousse into individual serving cups or bowls. Refrigerate for at least 30 minutes to set.
  5. Serve: Once chilled, the mousse is ready to serve! Optionally, top with a sprinkle of cocoa powder, chocolate shavings, or fresh berries for extra flavor and decoration.
