Ingredients:

  • 4 boneless pork chops
  • 1 cup almond flour or crushed pork rinds
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • Cooking oil (such as avocado oil or coconut oil) for frying

Instructions:

  1. Prepare the Breading Mixture:
    • In a shallow dish, combine the almond flour (or crushed pork rinds), grated Parmesan cheese, paprika, garlic powder, onion powder, dried thyme, salt, and pepper. Mix well to create your breading mixture.
  2. Coat the Pork Chops:
    • Pat the pork chops dry with paper towels to remove excess moisture.
    • Dip each pork chop into the beaten eggs, ensuring it’s evenly coated.
    • Transfer the pork chop to the breading mixture and press the mixture onto both sides to coat the pork chop thoroughly. Pressing the coating firmly will help it adhere better.
  3. Heat the Oil:
    • In a large skillet, heat a generous amount of cooking oil over medium-high heat. You’ll want enough oil to cover the bottom of the skillet to ensure even frying. If you’re using a deep fryer, preheat it to 350°F (175°C).
  4. Fry the Pork Chops:
    • Once the oil is hot (but not smoking), carefully add the coated pork chops to the skillet, making sure not to overcrowd the pan. You may need to fry them in batches.
    • Fry each pork chop for about 3-4 minutes per side or until they are golden brown and the internal temperature reaches 145°F (63°C). The cooking time may vary depending on the thickness of your pork chops.
  5. Drain and Rest:
    • Remove the fried pork chops from the skillet and place them on a plate lined with paper towels to drain any excess oil. Allow them to rest for a few minutes before serving.
  6. Serve:
    • Serve your keto fried pork chops with your favorite low-carb sides, such as cauliflower mash, sautéed spinach, or a crisp salad.

These keto fried pork chops are a delicious, low-carb alternative to traditional breaded pork chops. They’re crispy on the outside and tender on the inside, making them a satisfying and keto-friendly meal option.
