low carb cream cheese fudge

Here’s a simple and delicious low-carb cream cheese fudge recipe for you:

Ingredients:

  • 4 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup powdered erythritol (or your preferred low-carb sweetener)
  • 1 tsp vanilla extract
  • A pinch of salt
  • Optional: 1/4 cup chopped nuts (almonds, pecans, or walnuts)

Instructions:

  1. Prepare the pan: Line a small dish (like an 8×8 inch) with parchment paper or use silicone molds.
  2. Mix butter and cream cheese: In a medium-sized mixing bowl, combine the softened cream cheese and butter. Beat with an electric mixer until smooth and fluffy.
  3. Add the dry ingredients: Add the powdered erythritol, cocoa powder, and a pinch of salt. Continue to mix until well combined.
  4. Add vanilla: Stir in the vanilla extract and mix again until the ingredients are fully incorporated.
  5. Optional – Add nuts: If using nuts, fold them into the fudge mixture.
  6. Chill: Pour the mixture into your prepared dish or molds. Spread it out evenly. Refrigerate for at least 2 hours or until firm.
  7. Cut and serve: Once set, cut into small squares and enjoy! Store in the fridge.
