Lobster Shrimp Scampi

Sure, here’s a recipe for Lobster Shrimp Scampi:

Ingredients:

  • 2 lobster tails, thawed if frozen
  • 1/2 pound large shrimp, peeled and deveined
  • 8 ounces linguine pasta
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • Grated Parmesan cheese for serving (optional)

Instructions:

  1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, prepare the lobster tails. Using kitchen shears, cut through the top shell of the lobster tails lengthwise. Carefully loosen the meat from the shell, keeping it attached at the base, and lift the meat through the slit. Place the lobster tails on a cutting board and cut them into bite-sized pieces.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
  4. Add the lobster pieces to the skillet and cook for 2-3 minutes, until they start to turn opaque.
  5. Add the shrimp to the skillet and cook for another 2-3 minutes, until they are pink and opaque. Be careful not to overcook the seafood.
  6. Pour in the white wine, chicken broth, and lemon juice. Stir in the lemon zest and red pepper flakes. Season with salt and pepper to taste.
  7. Add the cooked linguine to the skillet and toss everything together until well combined. Cook for an additional minute to allow the pasta to absorb the flavors of the sauce.
  8. Remove the skillet from the heat and stir in the remaining 2 tablespoons of butter until melted. Sprinkle chopped parsley over the top.
  9. Serve the Lobster Shrimp Scampi hot, garnished with grated Parmesan cheese if desired. Enjoy!

This dish pairs well with a crisp white wine and some crusty bread to soak up the delicious sauce. Enjoy your meal!
