Yum, that sounds like serious comfort food! Want a recipe for a Loaded Potato & Meatloaf Casserole? Here’s a solid one that layers savory meatloaf with cheesy, loaded mashed potatoes—all baked into one epic dish.


🥔 Loaded Potato & Meatloaf Casserole

🍖 Ingredients:

For the meatloaf base:

  • 1½ lbs ground beef (or mix with ground pork)

  • 1 egg

  • 1/2 cup breadcrumbs

  • 1/4 cup milk

  • 1/4 cup ketchup

  • 1 tbsp Worcestershire sauce

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt & pepper to taste

For the loaded potato topping:

  • 3 cups mashed potatoes (about 4–5 medium potatoes)

  • 1/2 cup sour cream

  • 1/4 cup milk or cream

  • 1/2 cup shredded cheddar cheese (plus more for topping)

  • 4 slices bacon, cooked and crumbled

  • 2 green onions, chopped

  • Salt & pepper to taste

Optional Toppings:

  • Extra cheddar

  • More bacon

  • Chives or green onions


🔪 Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×9 or similar baking dish.

  2. Mix the meatloaf ingredients together in a large bowl until just combined. Press mixture evenly into the bottom of the prepared baking dish.

  3. Bake the meatloaf layer uncovered for about 25 minutes. Drain any excess fat.

  4. While it bakes, make mashed potatoes (or use leftovers!). Mix in sour cream, milk, cheese, bacon, green onions, salt, and pepper.

  5. Spread mashed potatoes evenly over the partially baked meatloaf layer. Sprinkle more cheese and bacon on top if you’re feeling bold.

  6. Return to oven and bake another 15–20 minutes until bubbly and golden on top.

  7. Cool slightly, garnish with green onions or chives, and dig in!
