LOADED CHICKEN & POTATOES

Here’s a recipe for Loaded Chicken & Potatoes, a delicious, hearty dish that’s perfect for a comforting meal:

Ingredients:

  • 2 lbs (900g) chicken breast or thighs, cut into bite-sized pieces
  • 1.5 lbs (680g) potatoes, diced into 1-inch cubes (use russet or red potatoes)
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp crushed red pepper flakes (optional, for a bit of heat)
  • 2 cups shredded cheddar cheese
  • 1 cup cooked and crumbled bacon (about 8 slices)
  • 1/4 cup chopped green onions
  • 1 cup sour cream or ranch dressing (for serving)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes:
    • In a large bowl, toss the diced potatoes with half of the olive oil, half of the salt, pepper, paprika, garlic powder, and onion powder. Spread them out in a single layer on a baking sheet lined with parchment paper or lightly greased.
  3. Bake the potatoes:
    • Bake in the preheated oven for 20-25 minutes, or until the potatoes start to get tender and slightly crispy on the edges.
  4. Prepare the chicken:
    • While the potatoes are baking, toss the chicken pieces in the remaining olive oil and seasonings.
  5. Add the chicken:
    • Once the potatoes are ready, remove them from the oven and scatter the seasoned chicken over the top of the potatoes. Return to the oven and bake for an additional 20-25 minutes, or until the chicken is cooked through and the potatoes are fully tender.
  6. Add the toppings:
    • Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese evenly over the chicken and potatoes. Then, add the crumbled bacon. Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Garnish and serve:
    • Once the cheese is melted, remove the dish from the oven and sprinkle with chopped green onions. Serve hot, with sour cream or ranch dressing on the side.

Tips:

  • You can customize this dish by adding vegetables like bell peppers, broccoli, or mushrooms during the chicken cooking phase.
  • If you prefer a spicier version, increase the amount of crushed red pepper flakes or add a dash of hot sauce to the chicken seasoning.
