Loaded Baked Potato Salad is a delicious twist on the classic potato salad, incorporating the flavors of a loaded baked potato. Here’s a basic recipe for you to try:

Ingredients:

  • 2 pounds red potatoes, washed and diced
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled cooked bacon
  • 1/4 cup chopped green onions
  • Salt and pepper, to taste
  • Optional: chopped fresh chives for garnish

Instructions:

  1. Cook Potatoes: Boil the diced red potatoes in a large pot of salted water until fork-tender. Drain and let them cool to room temperature.
  2. Prepare Dressing: In a bowl, mix together the sour cream and mayonnaise until well combined. Season with salt and pepper to taste.
  3. Assemble Salad: In a large mixing bowl, combine the cooled potatoes, shredded cheddar cheese, crumbled bacon, and chopped green onions.
  4. Add Dressing: Pour the sour cream and mayonnaise dressing over the potato mixture. Gently toss everything together until the potatoes are evenly coated.
