Lemon Vinaigrette Dressing

Sure, here’s a simple recipe for a lemon vinaigrette dressing:

Ingredients:

  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. In a small bowl, whisk together the lemon juice, Dijon mustard, minced garlic, and honey or maple syrup (if using) until well combined.
  2. Slowly drizzle in the olive oil while whisking constantly until the dressing is emulsified.
  3. Season with salt and pepper to taste.
  4. Taste and adjust the seasoning or acidity by adding more lemon juice or salt if needed.
  5. Use immediately or store in an airtight container in the refrigerator for up to a week. Before using, let the dressing come to room temperature and whisk again to re-emulsify if necessary.

This lemon vinaigrette is perfect for dressing salads, grilled vegetables, or even drizzling over grilled fish or chicken. Enjoy!
