Lemon Lush is a delightful layered dessert that’s perfect for lemon lovers. It typically consists of a buttery crust, a creamy cheese layer, a tart lemon pudding layer, and a fluffy whipped topping. Here’s a classic recipe for Lemon Lush:

Ingredients

Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup chopped pecans (optional)

Cream Cheese Layer:

  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (like Cool Whip)

Lemon Pudding Layer:

  • 2 (3.4 oz) packages instant lemon pudding mix
  • 3 cups cold milk

Whipped Topping:

  • 1 cup whipped topping (like Cool Whip)
  • Lemon zest for garnish (optional)

Instructions

  1. Prepare the Crust:
    • Preheat the oven to 350°F (175°C).
    • In a medium bowl, combine the flour, melted butter, and chopped pecans (if using).
    • Press the mixture into the bottom of a 9×13-inch baking dish.
    • Bake for 15-20 minutes or until lightly golden brown. Allow to cool completely.
  2. Make the Cream Cheese Layer:
    • In a medium bowl, beat the softened cream cheese until smooth.
    • Gradually add the powdered sugar and mix until well combined.
    • Fold in the whipped topping.
    • Spread the cream cheese mixture evenly over the cooled crust.
  3. Prepare the Lemon Pudding Layer:
    • In a large bowl, whisk together the instant lemon pudding mix and cold milk until thickened (about 2 minutes).
    • Spread the lemon pudding over the cream cheese layer.
  4. Top with Whipped Topping:
    • Spread the remaining whipped topping evenly over the lemon pudding layer.
    • Garnish with lemon zest if desired.
  5. Chill and Serve:
    • Refrigerate the dessert for at least 2 hours before serving to allow it to set.
    • Cut into squares and serve chilled.
