Lemon-Herb Baked Cod

Here’s a simple and delicious recipe for Lemon-Herb Baked Cod:

Ingredients:

  • 4 cod fillets (about 4-6 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (fresh)
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano (or 1 tablespoon fresh)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Preheat the oven: Set your oven to 400°F (200°C).
  2. Prepare the cod fillets: Pat the cod fillets dry with paper towels to remove excess moisture. This helps the seasoning stick better and ensures the fish cooks evenly.
  3. Season the fish: In a small bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Brush or spoon this mixture over the top of the cod fillets, making sure each fillet is well-coated.
  4. Bake: Place the seasoned cod fillets in a baking dish or on a lined baking sheet. Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Garnish and serve: Remove the cod from the oven and garnish with fresh parsley. Serve with lemon wedges on the side for extra freshness.

Tips:

  • If you like your fish with a little crispness, you can broil the cod for the last 1-2 minutes of baking.
  • Serve with roasted vegetables, a fresh salad, or a side of rice for a complete meal.
