Lemon Chicken Scallopine

Lemon Chicken Scallopine is a delicious, light, and flavorful dish, often served with a tangy lemon sauce. Here’s a basic recipe for you to try:

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour (for dredging)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup white wine (or chicken broth if you prefer non-alcoholic)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 1/2 cup chicken broth
  • 1 tbsp capers (optional, for added flavor)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Slice the chicken breasts in half horizontally to create thin cutlets. If they’re still thick, you can pound them to an even thickness.
    • Season both sides with salt and pepper.
    • Dredge the chicken cutlets in flour, shaking off any excess.
  2. Cook the Chicken:
    • In a large skillet, heat olive oil over medium-high heat.
    • Add the chicken cutlets and cook for about 2-3 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add butter and let it melt, scraping up any bits left from the chicken.
    • Pour in the white wine (or chicken broth), lemon juice, and chicken broth. Stir to combine and bring it to a simmer. Let it cook for about 3-4 minutes, reducing slightly.
    • If you’re using capers, add them now. You can also adjust the salt and pepper to taste.
  4. Finish the Dish:
    • Return the chicken to the skillet, spooning the sauce over the top. Let it cook for another 2-3 minutes until the chicken is heated through.
    • Garnish with lemon zest and chopped parsley.
  5. Serve:
    • Serve the lemon chicken scallopine with a side of your favorite vegetables, rice, or pasta.
