Lemon blueberry bread

Here’s a recipe for a delightful Lemon Blueberry Bread. This moist and flavorful bread is perfect for breakfast, a snack, or dessert!

Lemon Blueberry Bread Recipe

Ingredients:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk (or buttermilk for extra richness)
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest (from about 1-2 lemons)
  • 2 tbsp lemon juice
  • 1 cup fresh blueberries (you can use frozen, just don’t thaw them)
  • 1 tbsp all-purpose flour (to coat the blueberries)

Lemon Glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice
  • 1 tsp lemon zest (optional for extra flavor)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream the Butter and Sugar:
    • In a large bowl, cream the butter and sugar together until light and fluffy. You can use a hand mixer or stand mixer for this.
  4. Add Eggs and Flavorings:
    • Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Add the lemon zest, lemon juice, and vanilla extract. Mix until combined.
  5. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Prepare the Blueberries:
    • In a small bowl, toss the blueberries with 1 tablespoon of flour. This helps prevent the blueberries from sinking to the bottom of the bread.
  7. Fold in the Blueberries:
    • Gently fold the blueberries into the batter.
  8. Bake:
    • Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool:
    • Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  10. Prepare the Lemon Glaze:
    • In a small bowl, whisk together the powdered sugar and lemon juice until smooth. If the glaze is too thick, add more lemon juice, a little at a time, until it reaches your desired consistency.
  11. Glaze the Bread:
    • Once the bread has cooled, drizzle the lemon glaze over the top. Optionally, sprinkle with additional lemon zest.
  12. Serve:
    • Slice and enjoy your Lemon Blueberry Bread!
