Here’s a simple and delicious Lazy Girl Pecan Pie Bars recipe — all the classic flavor of pecan pie without the hassle of making a pie crust!


🥧 Lazy Girl Pecan Pie Bars

Ingredients

For the crust:

  • 1 cup (2 sticks) unsalted butter, melted

  • 2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1/4 tsp salt

For the topping:

  • 3 large eggs

  • 1 cup light corn syrup (or maple syrup for a twist)

  • 1 cup packed brown sugar

  • 2 tbsp all-purpose flour

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • 1½ cups chopped pecans


👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or foil and lightly grease it.

  2. Make the crust:

    • In a bowl, mix melted butter, flour, sugar, and salt until a dough forms.

    • Press mixture evenly into the bottom of the prepared pan.

    • Bake for 15–18 minutes, until just lightly golden. Let it cool slightly.

  3. Make the pecan topping:

    • In a bowl, whisk together eggs, corn syrup, brown sugar, flour, vanilla, and salt until smooth.

    • Stir in chopped pecans.

  4. Assemble and bake:

    • Pour the pecan mixture over the warm crust.

    • Return to oven and bake for 25–30 minutes or until the topping is set and golden brown.

  5. Cool completely in the pan, then lift out and slice into bars.


✅ Tips

  • For easy slicing, chill the bars first.

  • Add a pinch of cinnamon for extra warmth.

  • These freeze beautifully — perfect for make-ahead treats!
