Layered Strawberry Chocolate Cheesecake

Here’s a delicious recipe for Layered Strawberry Chocolate Cheesecake:

Ingredients:

For the Crust:

  • 1 ½ cups chocolate cookie crumbs (e.g., Oreo, or chocolate graham crackers)
  • ¼ cup melted butter

For the Chocolate Cheesecake Layer:

  • 8 oz (1 package) cream cheese, softened
  • ½ cup sugar
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 4 oz dark chocolate, melted
  • 2 eggs

For the Strawberry Cheesecake Layer:

  • 8 oz (1 package) cream cheese, softened
  • ½ cup sugar
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • ½ cup pureed fresh strawberries (about 1 cup of strawberries)
  • 1–2 drops red food coloring (optional for brighter pink)
  • 2 eggs

For the Strawberry Glaze:

  • ½ cup strawberry jam
  • 1 tbsp water
  • Fresh strawberries for garnish

Instructions:

1. Prepare the Crust:

  • Preheat your oven to 350°F (175°C).
  • Combine the chocolate cookie crumbs and melted butter until evenly coated.
  • Press the mixture into the bottom of a 9-inch springform pan to form an even crust.
  • Bake the crust for 8-10 minutes and set aside to cool.

2. Make the Chocolate Cheesecake Layer:

  • In a mixing bowl, beat the softened cream cheese and sugar until smooth.
  • Add the sour cream and vanilla extract, mixing well.
  • Stir in the melted dark chocolate.
  • Add the eggs one at a time, mixing on low speed until just combined.
  • Pour the chocolate cheesecake batter over the cooled crust and spread it evenly.
  • Bake for 20-25 minutes, or until set but still slightly jiggly in the center.
  • Let it cool for 10 minutes while you prepare the next layer.

3. Make the Strawberry Cheesecake Layer:

  • In another mixing bowl, beat the softened cream cheese and sugar until smooth.
  • Add the sour cream and vanilla extract, and mix in the pureed strawberries and optional food coloring.
  • Add the eggs one at a time, mixing on low speed until just combined.
  • Pour the strawberry cheesecake mixture over the cooled chocolate cheesecake layer.
  • Bake for another 30-35 minutes, or until the center is set but slightly jiggly.

4. Cool and Chill:

  • Remove the cheesecake from the oven and allow it to cool to room temperature.
  • Refrigerate for at least 4-6 hours or overnight to set completely.

5. Make the Strawberry Glaze:

  • In a small saucepan, heat the strawberry jam and water over medium heat, stirring until smooth and slightly thickened.
  • Let the glaze cool to room temperature.

6. Garnish and Serve:

  • Pour the cooled strawberry glaze over the cheesecake and spread it evenly.
  • Top with fresh strawberries for garnish.
  • Slice and enjoy your layered strawberry chocolate cheesecake!

This cheesecake is rich, creamy, and perfectly balanced between the decadent chocolate and fresh strawberry flavors.
