KIELBASA POTATO SOUP

Kielbasa potato soup is a hearty and flavorful soup that combines smoked sausage (kielbasa), potatoes, vegetables, and seasonings to create a comforting dish. Here’s a recipe to make Kielbasa Potato Soup:

Ingredients:

  • 1 pound smoked kielbasa sausage, sliced into rounds
  • 4 cups potatoes, peeled and diced into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, chopped
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 cup heavy cream or half-and-half
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large soup pot or Dutch oven, heat a bit of oil over medium heat. Add the sliced kielbasa sausage and cook until it’s browned on both sides. Remove the sausage from the pot and set it aside.
  2. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes or until the vegetables start to soften and the onion becomes translucent.
  3. Add the diced potatoes to the pot and cook for another 3-4 minutes, stirring occasionally.
  4. Pour in the chicken or vegetable broth to the pot. Add the dried thyme, bay leaf, and season with salt and black pepper to taste. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 15-20 minutes or until the potatoes and vegetables are tender.
  6. Remove and discard the bay leaf.
  7. Use an immersion blender to partially blend the soup, leaving some chunks for texture. If you don’t have an immersion blender, you can carefully transfer a portion of the soup to a blender, blend, and then return it to the pot.
  8. Return the browned kielbasa sausage to the pot and stir in the heavy cream or half-and-half. Heat the soup over low heat until it’s heated through, but do not let it boil after adding the cream to prevent curdling. Adjust the seasoning with more salt and pepper if needed.
  9. Once the soup is heated through and the flavors have melded, remove it from the heat.
  10. Serve the kielbasa potato soup hot, garnished with chopped fresh parsley if desired.
