KFC-Style Fried Chicken

Here’s a simple recipe for making KFC-style fried chicken at home:

Ingredients:

  • 8 pieces of chicken (mix of thighs, drumsticks, breasts, etc.)
  • 2 cups all-purpose flour
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 cups buttermilk
  • Vegetable oil for frying

Instructions:

  1. Marinate the Chicken:
    • Place the chicken pieces in a large bowl and pour buttermilk over them. Ensure all pieces are coated. Cover the bowl and refrigerate for at least 4 hours, or ideally overnight. This helps tenderize the chicken and infuse flavor.
  2. Prepare the Breading:
    • In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, oregano, thyme, salt, and black pepper. This is your seasoned flour mixture.
  3. Coat the Chicken:
    • Remove the chicken from the buttermilk marinade, allowing any excess liquid to drip off.
    • Dredge each piece of chicken in the seasoned flour mixture, ensuring it’s thoroughly coated. Press the flour onto the chicken to help it adhere.
  4. Double Coating (Optional):
    • For an extra crispy crust, you can repeat the dredging process: dip the floured chicken back into the buttermilk, then into the seasoned flour once more.
  5. Heat the Oil:
    • In a large, heavy-bottomed skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C) over medium-high heat. Use a thermometer to ensure accuracy.
  6. Fry the Chicken:
    • Carefully place the coated chicken pieces into the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for about 6-8 minutes per side, or until the chicken is golden brown and cooked through, with an internal temperature of 165°F (75°C).
  7. Drain and Serve:
    • Once the chicken is cooked, use a slotted spoon or tongs to transfer it to a wire rack set over a baking sheet. This allows any excess oil to drain off and helps keep the chicken crispy.
    • Serve the KFC-style fried chicken hot, alongside your favorite sides like mashed potatoes, coleslaw, biscuits, or corn on the cob.
