KFC ORIGINAL SECRET CHICKEN RECIPE

The recipe for KFC’s Original Secret Chicken is famously guarded, but over the years, several versions have circulated, with attempts to replicate it. Here’s a popular take that closely resembles KFC’s iconic flavor, but keep in mind this is an approximation:

Ingredients

  • 3 cups all-purpose flour
  • 2/3 tablespoon salt
  • 1/2 tablespoon thyme
  • 1/2 tablespoon basil
  • 1/3 tablespoon oregano
  • 1 tablespoon celery salt
  • 1 tablespoon black pepper
  • 1 tablespoon dry mustard
  • 4 tablespoons paprika
  • 2 tablespoons garlic salt
  • 1 tablespoon ground ginger
  • 3 tablespoons white pepper
  • 2 eggs
  • 2/3 cup milk
  • 1 whole chicken, cut into pieces
  • Vegetable oil (for frying)

Instructions

  1. Prepare the Chicken: Cut the chicken into 8 pieces (2 breasts, 2 wings, 2 thighs, 2 drumsticks).
  2. Marinate: Mix the eggs and milk in a bowl. Dip each piece of chicken into the mixture and let it marinate for 20-30 minutes.
  3. Mix the Spices: In a separate bowl, combine all the dry spices with the flour.
  4. Coat the Chicken: After marinating, remove the chicken from the milk-egg mixture, allowing excess to drip off. Dredge each piece in the seasoned flour mixture, ensuring it’s well-coated.
  5. Double Dipping: For extra crispy chicken, dip the flour-coated chicken back into the egg mixture, then dredge again in the flour mixture.
  6. Frying: Heat enough vegetable oil in a deep fryer or large pan to submerge the chicken. The oil should be heated to 350°F (175°C). Fry the chicken in batches for about 12-15 minutes, turning halfway through. The internal temperature should reach 165°F (74°C) for safety.
  7. Drain: Remove the chicken from the fryer and drain on paper towels.
  8. Serve: Let the chicken rest for 5 minutes before serving for the best texture and flavor.
