Keto pizza bites are a low-carb and delicious alternative to traditional pizza bites. They’re a great option for those following a ketogenic diet. Here’s a simple recipe for keto pizza bites:

Ingredients:

For the Pizza Dough:

  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup almond flour
  • 2 tablespoons cream cheese
  • 1 large egg
  • 1/2 teaspoon Italian seasoning (optional)
  • Pinch of salt

For the Pizza Toppings:

  • 1/2 cup sugar-free tomato sauce or marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • Mini pepperoni slices (or your choice of keto-friendly toppings like olives, bell peppers, or cooked sausage)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet or a pizza stone with parchment paper.
  2. Make the Pizza Dough:
    • In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese.
    • Microwave the cheeses in 30-second intervals, stirring in between, until they are completely melted and well combined.
    • Add the almond flour, egg, Italian seasoning (if using), and a pinch of salt to the melted cheese mixture. Mix everything together until a dough forms. You may need to use your hands to knead the dough thoroughly.
  3. Form Dough Balls: Divide the dough into small portions, about the size of a ping pong ball. You should get approximately 12 dough balls.
  4. Flatten the Dough: Place each dough ball onto the prepared baking sheet and use your fingers to flatten them into small discs, creating a base for the pizza bites.
  5. Add Toppings: Spoon a small amount of sugar-free tomato sauce onto each dough disc. Sprinkle shredded mozzarella cheese on top of the sauce, and add your choice of keto-friendly pizza toppings, such as mini pepperoni slices or olives.
  6. Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes or until the pizza bites are golden brown and the cheese is bubbly.
  7. Cool and Serve: Remove the pizza bites from the oven and let them cool for a few minutes before serving. This will allow the cheese to set.
  8. Enjoy: Serve your keto pizza bites as a tasty snack or appetizer. They’re best enjoyed warm.
