Keto Lemon Cookies

Here’s a simple recipe for Keto Lemon Cookies:

Ingredients:

  • 2 cups almond flour
  • 1/3 cup powdered erythritol (or any low-carb sweetener of your choice)
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, powdered erythritol, lemon zest, and salt. Mix well.
  3. Add the softened butter to the dry ingredients and mix until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, lemon juice, and vanilla extract.
  5. Pour the wet ingredients into the almond flour mixture and stir until a dough forms.
  6. Using your hands or a cookie scoop, roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand.
  7. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  8. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, store the cookies in an airtight container at room temperature for up to a week.
