🍖 Korean-Style BBQ Meatballs

Ingredients:

For the Meatballs:

  • 1 lb (450g) ground beef or pork (or a mix)

  • 2 garlic cloves, minced

  • 1-inch piece of ginger, grated

  • 2 green onions, finely chopped

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp gochujang (Korean chili paste)

  • 1 tbsp brown sugar

  • 1 egg

  • ½ cup panko breadcrumbs

  • 1 tsp salt

  • ½ tsp black pepper

  • Optional: a pinch of red pepper flakes if you want more heat

For the Glaze:

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp honey or brown sugar

  • 1 tbsp gochujang

  • 1 tsp sesame oil

  • 1 tsp cornstarch + 2 tsp water (slurry)


🔥 Spicy Mayo Sauce

Ingredients:

  • ½ cup mayo (Japanese Kewpie mayo recommended)

  • 1–2 tbsp sriracha (adjust to taste)

  • 1 tsp rice vinegar or lime juice

  • Optional: ½ tsp sugar for balance


🧑‍🍳 Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Mix all meatball ingredients in a large bowl until just combined. Don’t overmix!

  3. Form meatballs (about 1.5 inches wide) and place them on a parchment-lined baking sheet.

  4. Bake for 15–18 minutes, or until golden and cooked through.

  5. While they bake, whisk all glaze ingredients in a small saucepan. Bring to a simmer, add the cornstarch slurry, and stir until thickened. Turn off heat.

  6. Toss baked meatballs in the glaze until coated and shiny.

  7. For the spicy mayo, just whisk everything together in a bowl. Done!

  8. Serve hot, drizzled with spicy mayo and optionally topped with sesame seeds, chopped scallions, or even a few pickled cucumbers for crunch.
