ITALIAN SAUSAGE WITH PEPPERS AND ONIONS

Here’s a simple and delicious recipe for Italian Sausage with Peppers and Onions:

Ingredients:

  • 4 Italian sausages (mild or spicy, based on your preference)
  • 2 tablespoons olive oil
  • 2 bell peppers (red, yellow, or green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil (optional)
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1/4 cup chicken broth (optional, for extra flavor)
  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Cook the Sausages:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add the sausages and cook them until browned on all sides, about 8-10 minutes. Once browned, remove them from the pan and set aside.
  2. Sauté the Peppers and Onions:
    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the sliced bell peppers and onions. Sauté over medium heat, stirring occasionally, until the vegetables are soft and caramelized, about 8-10 minutes.
    • Add the minced garlic and cook for another minute, until fragrant.
  3. Add Seasonings:
    • Season the peppers and onions with salt, pepper, oregano, and optional basil or red pepper flakes.
    • If using, pour in the chicken broth and stir to combine. This will help deglaze the pan and add moisture.
  4. Return the Sausages to the Pan:
    • Place the cooked sausages back into the skillet, nestling them among the peppers and onions.
    • Cover and cook for another 5-7 minutes, until the sausages are cooked through and reach an internal temperature of 160°F (71°C).
  5. Serve:
    • Serve the Italian sausages with the peppers and onions, garnished with fresh parsley or basil if desired.
    • This dish is great on its own or served over pasta, with crusty bread, or in a sandwich roll!
