ITALIAN DRUNKEN NOODLES RECIPE

Italian Drunken Noodles, also known as “Drunken Spaghetti” or “Spaghetti All’Ubriaco,” is a delicious dish featuring pasta cooked in red wine. Here’s a simple recipe for you to try:

Ingredients:

  • 12 ounces (340g) spaghetti
  • 1 bottle (750ml) red wine (choose a wine you enjoy drinking)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • 1 can (14 ounces) diced tomatoes, undrained
  • Salt and black pepper to taste
  • 1/4 cup fresh basil, chopped
  • Grated Parmesan cheese for serving

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the spaghetti according to the package instructions until al dente.
    • Drain the pasta and set aside.
  2. Prepare the Wine Sauce:
    • In a large skillet, heat olive oil over medium heat.
    • Add minced garlic and red pepper flakes, sauté for about 1-2 minutes until the garlic is fragrant but not browned.
  3. Add Wine and Tomatoes:
    • Pour the entire bottle of red wine into the skillet.
    • Add the diced tomatoes with their juices.
    • Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the wine to reduce and flavors to meld.
  4. Combine Pasta and Sauce:
    • Add the cooked and drained spaghetti to the wine and tomato sauce.
    • Toss the pasta in the sauce until well coated and let it simmer for an additional 5-7 minutes to absorb the flavors.
  5. Season and Finish:
    • Season with salt and black pepper to taste.
    • Sprinkle fresh chopped basil over the pasta and toss to combine.
  6. Serve:
    • Plate the Italian Drunken Noodles and garnish with grated Parmesan cheese.
    • Serve immediately and enjoy your flavorful and unique pasta dish!

Feel free to adjust the quantities and spice levels according to your taste preferences. This dish pairs well with a glass of the same red wine used in the recipe.
