Irresistible French Onion Beef Sloppy Joes

Ingredients:

  • 1 lb ground beef (80/20 is ideal)

  • 2 tbsp butter

  • 1 large yellow onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 tbsp Worcestershire sauce

  • 1 tbsp tomato paste

  • ½ cup beef broth (or French onion soup for extra depth)

  • 1 tsp fresh thyme (or ½ tsp dried thyme)

  • Salt and black pepper, to taste

  • 4 burger buns (brioche or potato rolls are great)

  • 1 cup shredded Gruyère or Swiss cheese (mozzarella as a backup)

Optional:

  • 1 tsp brown sugar (to help caramelize onions)

  • Toasted buns with a garlic butter spread


Instructions:

  1. Caramelize the Onions:

    • In a large skillet over medium heat, melt butter.

    • Add sliced onions and a pinch of salt. Cook slowly for 15–20 minutes, stirring occasionally until golden and soft. (Add brown sugar if using.)

    • Add garlic and thyme, cook 1 minute more. Push onions to one side of the pan.

  2. Cook the Beef:

    • Add ground beef to the pan. Brown and break it up, mixing it with the onions.

    • Drain excess grease if needed.

  3. Build the Flavor:

    • Stir in tomato paste, Worcestershire sauce, and beef broth.

    • Simmer until thickened and slightly saucy — about 5–7 minutes.

    • Taste and season with salt and pepper.

  4. Assemble:

    • Toast the buns (butter and garlic optional).

    • Spoon the beef mixture onto bottom halves.

    • Top with shredded cheese and place under broiler briefly to melt.

    • Cap with the top bun and serve hot.


Serving Suggestions:

  • Serve with crispy French fries, a pickle spear, or a side salad.

  • For a twist, serve open-faced on toasted sourdough.
