Instant Pot Carnitas Recipe

Certainly! Here’s a simple Instant Pot Carnitas recipe for you:

Ingredients:

  • 3 lbs pork shoulder, cut into 2-inch cubes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 orange, juiced
  • 1 lime, juiced
  • 1/4 cup chicken broth
  • 2 tablespoons vegetable oil

For serving:

  • Corn or flour tortillas
  • Salsa
  • Chopped cilantro
  • Diced onions
  • Lime wedges

Instructions:

  1. In a bowl, mix the cumin, chili powder, oregano, smoked paprika, salt, and black pepper. Rub this spice mixture evenly over the pork cubes.
  2. Turn on the Instant Pot to the “Saute” function. Add the vegetable oil.
  3. Brown the pork cubes in batches for about 2-3 minutes on each side. Once browned, remove them and set aside.
  4. In the same Instant Pot, add chopped onions and garlic. Sauté for 2-3 minutes until softened.
  5. Add the browned pork back into the Instant Pot. Pour in the orange juice, lime juice, and chicken broth.
  6. Close the Instant Pot lid and set the valve to “Sealing.” Cook on high pressure for 40 minutes.
  7. Once the cooking is complete, allow for a natural pressure release for about 10 minutes, then manually release the remaining pressure.
  8. Using a slotted spoon, transfer the pork to a cutting board. Shred the meat using two forks.
  9. Optionally, you can transfer the shredded meat to a baking sheet and broil for a few minutes to crisp up the edges.
  10. Serve the carnitas on warm tortillas with your favorite toppings such as salsa, chopped cilantro, diced onions, and lime wedges.
