Here’s a delicious and balanced recipe for Honey Mustard Chicken with Roasted Asparagus and Cheese. This dish combines sweet and savory flavors with a touch of richness from the cheese.


🍗 Honey Mustard Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1/4 cup Dijon mustard

  • 2 tbsp honey

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • Salt and pepper to taste

  • Optional: 1 tsp whole grain mustard for texture

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. In a small bowl, mix Dijon mustard, honey, olive oil, garlic, salt, and pepper.

  3. Place chicken breasts in a baking dish and coat thoroughly with the honey mustard sauce.

  4. Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (74°C), basting halfway through.


🥦 Roasted Asparagus with Cheese

Ingredients:

  • 1 bunch fresh asparagus, trimmed

  • 1 tbsp olive oil

  • Salt and pepper

  • 1/3 cup grated Parmesan or shredded mozzarella (or a mix)

Instructions:

  1. Spread asparagus on a baking sheet lined with parchment paper.

  2. Drizzle with olive oil, season with salt and pepper, and toss to coat.

  3. Roast in the oven (same temp as chicken) for 12–15 minutes until tender.

  4. Sprinkle cheese over asparagus in the last 2–3 minutes of roasting.


Serving Suggestions:

  • Plate the chicken with a drizzle of extra honey mustard sauce.

  • Serve asparagus on the side, optionally garnished with lemon zest or crushed red pepper for a kick.

  • Add mashed potatoes, wild rice, or a simple green salad for a full meal.
