For the Honey Lime Chicken:

  • 2 chicken breasts (boneless, skinless)

  • 2 tbsp olive oil

  • 2 tbsp honey

  • Juice and zest of 1 lime

  • 2 garlic cloves, minced

  • 1/2 tsp chili powder

  • Salt and pepper to taste

For the Avocado Rice:

  • 2 cups cooked jasmine or basmati rice

  • 1 ripe avocado

  • Juice of 1/2 lime

  • 2 tbsp chopped cilantro (optional)

  • Salt to taste

Optional toppings:

  • Diced cherry tomatoes

  • Extra avocado slices

  • Sour cream or Greek yogurt

  • JalapeΓ±o slices

  • Lime wedges

1. Marinate the Chicken

  • In a bowl, mix olive oil, honey, lime juice and zest, garlic, chili powder, salt, and pepper.

  • Add chicken, coat well, and let it marinate for at least 15 minutes (or up to 2 hours in the fridge).

2. Cook the Chicken

  • Grill or pan-sear chicken over medium-high heat for about 6–7 minutes per side, or until cooked through.

  • Let it rest for a few minutes, then slice thinly.

3. Prepare the Avocado Rice

  • In a bowl, mash the avocado.

  • Stir in cooked rice, lime juice, cilantro, and salt. Mix until creamy and well combined.

4. Assemble the Stack

  • Use a food ring mold or ramekin to layer:

    1. Avocado rice on the bottom

    2. Sliced honey lime chicken on top

    3. Optional toppings

  • Gently press down, then lift the mold for a clean stack.

  • No ring mold? Use a small bowl lined with plastic wrap and flip it onto the plate.

  • Add black beans or corn for a Southwest twist.

  • Great served warm or cold!
