Here’s a recipe for Honey-Glazed Roasted Brussels Sprouts with Bacon that combines savory, sweet, and smoky flavors for a delicious side dish!

Ingredients:

  • Brussels Sprouts: 1 lb (about 4 cups, trimmed and halved)
  • Bacon: 6 slices (cut into small pieces)
  • Olive Oil: 2 tbsp
  • Honey: 2 tbsp
  • Balsamic Vinegar: 1 tbsp
  • Garlic: 2 cloves (minced)
  • Salt and Pepper: to taste
  • Red Pepper Flakes: (optional, for a little heat)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Brussels Sprouts: Trim and halve the Brussels sprouts. If any are particularly large, quarter them to ensure they cook evenly.
  3. Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy, about 6-8 minutes. Once cooked, transfer the bacon to a paper towel-lined plate and set aside. Reserve about 1 tablespoon of bacon drippings.
  4. Toss the Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, salt, pepper, and the reserved bacon drippings. Spread them evenly on a baking sheet, cut side down.
  5. Roast: Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are golden brown and crispy on the edges, flipping them halfway through for even cooking.
  6. Make the Glaze: While the Brussels sprouts are roasting, prepare the glaze. In a small saucepan, combine the honey, balsamic vinegar, and minced garlic. Heat over medium heat, stirring occasionally, until the glaze thickens slightly (about 3-4 minutes). If you want a little spice, you can add a pinch of red pepper flakes.
  7. Combine the Brussels Sprouts: Once the Brussels sprouts are roasted, transfer them to a serving bowl. Drizzle the honey-balsamic glaze over them and toss gently to coat.
  8. Add Bacon: Sprinkle the crispy bacon over the Brussels sprouts and toss again.
  9. Serve: Serve the honey-glazed Brussels sprouts with bacon immediately, garnished with extra freshly ground black pepper if desired.

Tips:

  • For extra crispiness, you can roast the Brussels sprouts on a wire rack set on top of the baking sheet.
  • Feel free to experiment with other herbs like thyme or rosemary for added flavor.
