HONEY GARLIC CHICKEN BITES OVER CREAMY RICE

Here’s a delicious recipe for Honey Garlic Chicken Bites over Creamy Rice — a comforting, flavorful dish with the perfect balance of sweet, savory, and creamy:


🍯 Honey Garlic Chicken Bites over Creamy Rice

🐔 For the Chicken Bites:

Ingredients:

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces

  • Salt & pepper to taste

  • 1/2 cup flour (for light dredging)

  • 2 tbsp cornstarch (for crispiness)

  • 2 tbsp oil (vegetable or olive)

Honey Garlic Sauce:

  • 1/3 cup honey

  • 1/4 cup soy sauce

  • 3 cloves garlic, minced

  • 1 tbsp rice vinegar (or apple cider vinegar)

  • 1 tbsp ketchup (adds a nice tang)

  • 1/2 tsp red pepper flakes (optional, for a kick)

  • 1 tsp cornstarch + 1 tbsp water (for slurry)


🍚 For the Creamy Rice:

Ingredients:

  • 1 cup uncooked jasmine or basmati rice

  • 2 tbsp butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 cups chicken broth

  • 1/2 cup heavy cream (or half & half)

  • Salt & pepper to taste

  • 1/4 cup grated Parmesan cheese (optional, for extra richness)


🔪 Instructions:

1. Make the Creamy Rice:

  1. In a saucepan, melt butter over medium heat. Sauté onion until soft, about 3 minutes.

  2. Add garlic and cook for 30 seconds until fragrant.

  3. Stir in the rice and toast for 1 minute.

  4. Pour in the chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15–18 minutes.

  5. Once rice is tender, stir in the cream, Parmesan (if using), and season with salt and pepper. Keep warm.


2. Cook the Chicken:

  1. Season chicken pieces with salt and pepper. Toss with flour and cornstarch to coat.

  2. Heat oil in a skillet over medium-high heat. Add chicken in a single layer, cooking until golden and cooked through, about 6–8 minutes. Remove and set aside.


3. Make the Honey Garlic Sauce:

  1. In the same pan, lower heat to medium. Add garlic and sauté 30 seconds.

  2. Stir in honey, soy sauce, vinegar, ketchup, and red pepper flakes. Bring to a simmer.

  3. Add the cornstarch slurry and cook until the sauce thickens, about 2–3 minutes.

  4. Return the chicken to the pan and toss to coat in the sticky sauce.
