Homemade Soy Milk

Making soy milk at home is a simple and rewarding process. Here’s a basic recipe to guide you through the process:

Ingredients:

  • 1 cup dried soybeans
  • Water for soaking and blending
  • Sweetener (optional) such as sugar, honey, or maple syrup
  • Flavorings (optional) such as vanilla extract or cocoa powder

Equipment:

  • Blender
  • Nut milk bag or cheesecloth
  • Large bowl
  • Pot
  • Strainer

Instructions:

  1. Soak the Soybeans:
    • Rinse the dried soybeans under cold water.
    • Place the soybeans in a large bowl and cover them with water. Allow them to soak overnight or for at least 8 hours. The beans will expand during soaking, so ensure they’re fully submerged.
  2. Blend the Soybeans:
    • After soaking, drain and rinse the soybeans.
    • Place the soaked soybeans in a blender and add 3-4 cups of fresh water. The ratio of water to soybeans depends on how thick you want your soy milk to be. More water will result in thinner milk.
    • Blend the soybeans and water until smooth. This may take a few minutes.
  3. Strain the Mixture:
    • Place a nut milk bag or cheesecloth over a large bowl or pot.
    • Pour the blended soybean mixture into the nut milk bag or cheesecloth.
    • Squeeze or press the bag to extract as much liquid as possible. You’ll be left with soy milk in the bowl or pot, and the pulp (okara) in the bag.
  4. Cook the Soy Milk (optional):
    • Transfer the strained soy milk to a pot.
    • Heat the soy milk over medium heat, stirring constantly to prevent sticking.
    • Bring the soy milk to a gentle simmer and cook for about 10-15 minutes. This step is optional but can help remove any raw bean taste and improve the texture.
  5. Sweeten and Flavor (optional):
    • If desired, sweeten the soy milk with your choice of sweetener, such as sugar, honey, or maple syrup. Add flavorings like vanilla extract or cocoa powder for additional flavor.
  6. Cool and Store:
    • Allow the soy milk to cool to room temperature before transferring it to a clean container or bottle.
    • Store the soy milk in the refrigerator for up to 4-5 days. Shake well before using, as separation may occur.
