[Homemade] Soft Salted Caramels

Homemade soft salted caramels are a delightful treat that combines the rich sweetness of caramel with a touch of salt for the perfect balance of flavors. Here’s a recipe to make your own:

Ingredients:

  • 1 cup (2 sticks) unsalted butter
  • 2 1/4 cups granulated sugar
  • 1 cup light corn syrup
  • 2 cups heavy cream
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons sea salt (for sprinkling)
  • Parchment paper
  • Cooking spray or additional butter for greasing the pan

Instructions:

  1. Prepare the Pan: Line a 9×9-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal later. Grease the parchment paper and the sides of the pan with cooking spray or butter. This will make it easier to remove the caramels once they set.
  2. Combine Ingredients: In a heavy-bottomed saucepan, melt the butter over medium heat. Stir in the granulated sugar and corn syrup. Cook, stirring constantly until the mixture comes to a boil.
  3. Cook to Desired Temperature: Insert a candy thermometer into the mixture, making sure it doesn’t touch the bottom of the pan. Cook the caramel mixture until it reaches 244°F (118°C), which is the soft ball stage. This can take about 10-15 minutes.
  4. Add Cream and Vanilla: Remove the saucepan from heat and carefully stir in the heavy cream. Be cautious as it may bubble up. Put the saucepan back on the heat and continue to cook, stirring constantly, until the temperature reaches 248°F (120°C). This is the firm ball stage.
  5. Remove from Heat and Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract. Mix until well combined.
  6. Pour into Prepared Pan: Pour the caramel mixture into the prepared baking pan. Allow it to cool for a few minutes, then sprinkle the sea salt evenly over the top.
  7. Cool and Set: Let the caramels cool at room temperature for several hours or overnight until they are firm.
  8. Cut into Pieces: Once the caramels have set, use the parchment paper overhang to lift them out of the pan. Place them on a cutting board and use a sharp knife greased with cooking spray to cut them into small squares or rectangles.
  9. Wrap the Caramels: If desired, you can wrap each caramel in parchment paper or wax paper for storage and presentation.
  10. Enjoy: Your homemade soft salted caramels are ready to enjoy! They make excellent gifts or sweet treats for special occasions.

Store the caramels in an airtight container at room temperature or in the refrigerator for longer shelf life. Enjoy the sweet and salty goodness!
