Here’s a simple recipe for homemade potato cakes that are crispy on the outside and soft on the inside!

Homemade Potato Cakes

Ingredients:

  • 2 cups mashed potatoes (about 4 medium potatoes)
  • 1/2 cup all-purpose flour
  • 1/2 cup grated cheese (optional)
  • 1/4 cup green onions or chives, chopped
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Oil for frying

Instructions:

  1. Prepare the Mashed Potatoes:
    • If you haven’t done so already, boil and mash the potatoes until smooth. Let them cool slightly.
  2. Mix the Ingredients:
    • In a large bowl, combine the mashed potatoes, flour, cheese (if using), green onions, egg, salt, pepper, and garlic powder. Mix until well combined. The mixture should hold together; if it’s too wet, add a bit more flour.
  3. Shape the Cakes:
    • Take a small amount of the mixture and form it into patties (about 3-4 inches in diameter). You can make them as thick or thin as you like.
  4. Heat the Oil:
    • In a large skillet, heat a few tablespoons of oil over medium heat.
  5. Fry the Cakes:
    • Carefully place the potato cakes in the skillet, making sure not to overcrowd them. Fry for about 4-5 minutes on each side or until they are golden brown and crispy.
  6. Drain and Serve:
    • Remove the cakes from the skillet and place them on a paper towel to drain excess oil. Serve warm, and enjoy with your favorite dipping sauce or sour cream!

Tips:

  • You can customize your potato cakes by adding cooked bacon, herbs, or spices.
  • Leftover mashed potatoes work great for this recipe!
  • They can also be baked in the oven at 400°F (200°C) for about 20 minutes, flipping halfway through for a healthier option.
