Homemade Pineapple Soft Serve Ice Cream
Ingredients:
- 1 ripe pineapple, peeled, cored, and cut into chunks
- 1 cup full-fat coconut milk (or any preferred milk)
- 2-3 tablespoons honey or agave syrup (optional, to taste)
- 1 tablespoon fresh lemon juice
- Pinch of salt
Instructions:
- Freeze Pineapple Chunks:
- Spread the pineapple chunks in a single layer on a baking sheet.
- Place the baking sheet in the freezer and freeze the pineapple chunks for at least 4 hours or overnight until completely frozen.
- Blend Ingredients:
- In a high-powered blender or food processor, add the frozen pineapple chunks, coconut milk, honey or agave syrup (if using), lemon juice, and a pinch of salt.
- Blend on high until the mixture is smooth and creamy, scraping down the sides as needed. This may take a few minutes, and you might need to stop and stir occasionally to help it blend evenly.
- Adjust Sweetness and Consistency:
- Taste the mixture and add more honey or agave syrup if needed for additional sweetness.
- If the mixture is too thick, add a little more coconut milk to reach the desired soft-serve consistency.
- Serve Immediately:
- Scoop the soft serve into bowls or cones and serve immediately for the best texture.
- Storage:
- If you have leftovers or prefer a firmer texture, transfer the soft serve to an airtight container and freeze for 1-2 hours. Allow it to sit at room temperature for a few minutes before scooping.
Tips:
- For an extra creamy texture, you can add a frozen banana to the blend.
- If you don’t have fresh pineapple, canned pineapple chunks (drained) can be used, but the flavor and texture might differ slightly.
- You can also experiment by adding other frozen fruits like mango or berries for a different flavor profile.
