Here’s a delicious recipe for homemade orange cupcakes:

Homemade Orange Cupcakes

Ingredients

For the cupcakes:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • Zest of 1 large orange
  • 1/4 cup fresh orange juice
  • 1 ½ teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the orange frosting:

  • 1/2 cup unsalted butter, softened
  • 2-3 cups powdered sugar (adjust for desired sweetness)
  • 2-3 tablespoons fresh orange juice
  • Zest of 1 orange
  • 1 teaspoon vanilla extract

Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.

2. Mix Dry Ingredients:

  • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. Cream Butter and Sugar:

  • In a large bowl, beat the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).

4. Add Eggs and Flavorings:

  • Add the eggs one at a time, beating well after each addition. Mix in the orange zest, orange juice, and vanilla extract.

5. Combine Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

6. Fill Cupcake Liners:

  • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

7. Bake:

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

8. Make the Frosting:

  • In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Add the orange juice, orange zest, and vanilla extract, and beat until smooth and fluffy. Adjust the consistency with more powdered sugar or orange juice if needed.

9. Frost the Cupcakes:

  • Once the cupcakes are completely cooled, frost them with the orange frosting.

Tips

  • For extra flavor, you can add a bit of orange extract to the frosting.
