Homemade FLUFFY POTATO DINNER ROLLS

Homemade fluffy potato dinner rolls sound absolutely delicious! Here’s a basic recipe to get you started:

Ingredients:

  • 1 cup mashed potatoes (about 2 medium potatoes)
  • 1/2 cup warm water
  • 2 1/4 teaspoons active dry yeast (or one packet)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 2 large eggs
  • 4-5 cups all-purpose flour
  • Additional melted butter for brushing

Instructions:

  1. Prepare the mashed potatoes: Peel and chop the potatoes into small cubes. Boil until tender, then mash until smooth. Let them cool to room temperature.
  2. Activate the yeast: In a small bowl, combine warm water, yeast, and a pinch of sugar. Let it sit for about 5-10 minutes until frothy.
  3. Mix the dough: In a large mixing bowl or the bowl of a stand mixer, combine the mashed potatoes, sugar, melted butter, salt, eggs, activated yeast mixture, and 2 cups of flour. Mix until well combined.
  4. Add flour gradually: Gradually add more flour, 1/2 cup at a time, until the dough comes together and pulls away from the sides of the bowl. You may not need to use all of the flour.
  5. Knead the dough: Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, or until the dough is smooth and elastic. Alternatively, you can knead the dough using a stand mixer with a dough hook attachment for about 3-5 minutes.
  6. First rise: Place the dough in a greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm, draft-free place for about 1-1.5 hours, or until doubled in size.
  7. Shape the rolls: Punch down the dough and divide it into equal-sized portions. Shape each portion into a ball and place them in a greased baking dish, leaving a little space between each roll.
  8. Second rise: Cover the rolls with a clean kitchen towel or plastic wrap and let them rise for another 30-45 minutes, or until they double in size.
  9. Preheat and bake: Preheat your oven to 375°F (190°C). Once the rolls have risen, brush the tops with melted butter. Bake for 15-20 minutes or until the rolls are golden brown on top and sound hollow when tapped on the bottom.
  10. Serve: Remove from the oven and let the rolls cool slightly before serving. Enjoy your fluffy potato dinner rolls warm with butter or your favorite toppings!
