Ingredients:
- 1/4 cup of fat (you can use drippings from cooked sausage or bacon, or butter)
- 1/4 cup of all-purpose flour
- 2 cups of milk
- Salt and pepper to taste

- Heat the fat in a skillet over medium heat. If you’re using bacon or sausage drippings, make sure to keep any crispy bits in the skillet as they add flavor to the gravy.
- Once the fat is hot, gradually sprinkle in the flour, stirring constantly to combine. Cook the flour and fat mixture (called a roux) for a few minutes until it turns a light golden brown color. This helps to cook out the raw flavor of the flour.
